Method

  1. Heat the oven to 220 °C. Cut the 700 g of sweet potato into 1 cm batons, toss with half the olive oil and the salt and roast for 25 minutes, turning halfway, until golden outside and soft inside.
  2. Meanwhile, fry the sliced onion and garlic in a tablespoon of the olive oil over low heat for 8 minutes, until the onion is golden and sweet. Season with a little salt.
  3. Fry the 6 eggs in the remaining very hot olive oil for 2 minutes, until the white is set and the yolk still runny.
  4. Arrange the sweet potato on a platter, scatter the onion over it and place the eggs on top.
  5. Dust with the paprika and pepper and serve at once, breaking the yolks so they coat the sweet potato.
