Method
- Chop the onion, garlic and pepper and fry gently in the olive oil over medium heat for 8 minutes, until the onion turns translucent. Add the cumin and paprika and fry for 1 minute more.
- Add the tinned tomatoes and let them reduce for 5 minutes over medium heat, crushing the pieces with the spoon.
- Add the 600 g of black beans, drained and rinsed, and about 150 ml of water — the liquid should come halfway up the beans. Season with the salt.
- Simmer over low heat for 20 minutes, stirring now and then, until the sauce thickens and clings to the beans.
- Finish with the chopped coriander and serve.
