  1. Chop the onion, garlic and pepper and fry gently in the olive oil over medium heat for 8 minutes, until the onion turns translucent. Add the cumin and paprika and fry for 1 minute more.
  2. Add the tinned tomatoes and let them reduce for 5 minutes over medium heat, crushing the pieces with the spoon.
  3. Add the 600 g of black beans, drained and rinsed, and about 150 ml of water — the liquid should come halfway up the beans. Season with the salt.
  4. Simmer over low heat for 20 minutes, stirring now and then, until the sauce thickens and clings to the beans.
  5. Finish with the chopped coriander and serve.
