Method
- Bring 700 ml of water to the boil with half the salt, add the 340 g of brown rice and cook, covered, over low heat for 35 to 40 minutes, until the water is absorbed and the grain is tender but firm. Take off the heat and leave covered for 5 minutes.
- Meanwhile, cut the seitan into 1 cm strips and brown it in the hot olive oil for 5 to 6 minutes, stirring, with the paprika, until crisp at the edges.
- Add the onion and pepper in thin strips, season with the remaining salt and stir-fry over high heat for 6 to 8 minutes, until soft but still with some bite.
- Season with the chopped garlic and the soy sauce and toss for 2 minutes, until the sauce coats the seitan.
- Fluff the brown rice with a fork and serve the stir-fry on top.
