  1. Loosen the udon noodles in boiling water 30 seconds, then drain.
  2. Mix soy sauce, sake, mirin and sesame oil.
  3. Heat vegetable oil. Stir-fry the pork loin with salt and black pepper until almost cooked.
  4. Add onion, cabbage, carrot and spring onion. Cover 2 minutes until the cabbage wilts.
  5. Toss in the udon noodles and the sauce until coated and hot.
