  1. Cook the Japanese short-grain rice. Mix spicy bean paste, miso paste, mirin, soy sauce, oyster sauce, sesame oil, cornstarch and a little chicken stock.
  2. Heat vegetable oil. Fry garlic and ginger, then the ground pork until no longer pink.
  3. Stir in the sauce and simmer 2 minutes.
  4. Slide in the silken tofu cubes and toss gently until hot and slightly thick.
  5. Finish with spring onion and serve with the rice.
