  1. Cook the Japanese short-grain rice. Soften the onion in vegetable oil and cool.
  2. Soak panko breadcrumbs in milk. Mix with ground beef, ground pork, onion, egg, nutmeg, salt and black pepper until sticky. Shape four oval patties and dent the centres.
  3. Brown in oil. Cover and steam 6 minutes until cooked through.
  4. In the pan, melt butter with ketchup, Worcestershire sauce and a splash of water until glossy.
  5. Spoon the sauce over the hambagu and serve with the rice.
