Method
- Start by seasoning the pork steaks. Place the pork steaks in a bowl and add salt, freshly ground black pepper and one garlic clove finely chopped. Leave to marinate for about 5 minutes.
- In a large frying pan, add a drizzle of olive oil and heat over medium-high heat (170°C).
- When the oil is hot, add the pork steaks to the pan. Do not overcrowd the pan; if necessary, cook in two batches.
- Cook the pork steaks for about 2-3 minutes on each side, until golden and cooked through. If you like, you can add a little white wine or beer to the pan after turning the steaks to create a sauce.
- While the pork steaks are cooking, cut the rolls in half horizontally.
- If you like, you can lightly toast the roll in a toaster or in the same pan where you cooked the pork steaks for about 1 minute.
- Once the pork steaks are ready, remove them from the pan and set aside.
- Assemble the bifanas: place one or two pork steaks inside each roll. Add a generous teaspoon of mustard to taste.
- Serve the bifanas hot immediately.
