Method
- Heat vegetable oil and brown the beef chuck on all sides. Move to a slow cooker.
- Blend soaked guajillo chiles and ancho chiles with garlic, cider vinegar, brown sugar, chipotle in adobo, Mexican oregano, cinnamon, salt and water until smooth. Strain into the cooker. Pour in the beer.
- Cook on high about 6 hours until the beef shreds. Skim fat, shred the meat, and moisten with the sauce.
- Taste for salt and serve.
Shopping tip
Dried guajillo and ancho are medium in PT. Mix paprika with a little chili flakes if the Latin shop is closed. Cerveja is optional liquid. Cachaço or acém for chuck.
