  1. Heat the oven to 190C. Cut lids from the tomatoes, scoop the pulp and chop it.
  2. Soften onion and garlic in olive oil. Add rice, tomato pulp, parsley, mint, oregano, salt and black pepper. Cook 5 minutes.
  3. Fill the tomatoes loosely. Set them in a tray with potato wedges, olive oil and a splash of water. Replace the lids.
  4. Bake about 45 minutes until the rice is tender and the potatoes are golden. Rest 10 minutes.
