Method

  1. Mix miso paste, sesame paste, soy sauce, garlic, ginger, sesame oil and a pinch of sugar. This is the tare.
  2. Heat a little vegetable oil. Fry the tare 30 seconds until fragrant. Pour in chicken stock and dashi and simmer gently.
  3. Add the chicken thighs and cook until no pink remains. Slice the chicken. Taste for salt.
  4. Boil the ramen noodles in a second pot. Drain well.
  5. Bowl the noodles, ladle the miso broth, and top with chicken, frozen corn, butter, bean sprouts, eggs and spring onion.
