Method
- Cook the Japanese short-grain rice. Mix dashi, soy sauce, mirin, sake and sugar in a wide pan.
- Simmer the onion until half tender. Add the chicken thighs and cook until no pink remains.
- Scatter half the spring onion. Pour in two thirds of the eggs, then the rest.
- Cover 2 minutes until the eggs are just set.
- Slide over the rice and finish with spring onion.
