  1. Cook the Japanese short-grain rice. Mix miso paste, sugar, mirin and sake until smooth.
  2. Halve the eggplant lengthwise, score the flesh, and brush with sesame oil and a little vegetable oil. Season with salt.
  3. Bake cut side down at 220C for 15 minutes.
  4. Turn, brush with the miso glaze, and grill 3 to 5 minutes until the glaze bubbles.
  5. Scatter sesame seeds and spring onion. Serve with the rice.
