  1. Cook the Japanese short-grain rice. Mix dashi, sake, mirin, soy sauce and sugar in a cold pan.
  2. Spread the onion in the liquid, then lay the thinly sliced beef on top.
  3. Cover and simmer until the onion is tender and the beef is just cooked.
  4. Stir in the ginger. Scatter spring onion.
  5. Spoon the beef and broth over the rice.

Ask the butcher for vaca fatiada fina, or freeze a bife and slice thin. Dashi powder (HonDashi) is in Asian shops and some Continente world-food bays. Mirin too. Pickled ginger is optional.
