  1. Mix yogurt with garlic, ginger, garam masala, cumin, coriander, turmeric, chilli powder and salt.
  2. Sauté onion in ghee until gold. Add cauliflower, carrot and potatoes with the yogurt mix. Stew until the vegetables are half-tender. Stir in peas.
  3. Scatter rinsed basmati over the vegetables. Pour in hot vegetable stock to just cover. Dot with ghee.
  4. Cover tightly, cook on low 18 minutes, rest 10 minutes. Fluff and scatter coriander.
