  1. Boil potatoes until tender. Drain, peel and crush roughly.
  2. Whisk yogurt with gram flour, turmeric, chili powder, ground coriander and water until smooth.
  3. Heat ghee. Sizzle cumin seeds, then fry ginger and green chili. Add the potatoes and salt.
  4. Take the pan off the heat. Stir in the yogurt mix. Return to a low simmer 5 minutes. Scatter coriander.
