  1. Dry-fry cumin seeds 1 minute. Heat vegetable oil and soften onion, garlic, ginger and green chili.
  2. Stir in ground coriander, turmeric, paprika, garam masala and salt. Add canned tomatoes, chickpeas and water. Simmer 10 minutes.
  3. Fold in spinach and lemon juice until the leaves wilt.
  4. Taste for salt and serve.
