  1. Slice the pork loin thin. Toss with soy sauce, dry sherry and cornstarch. Warm the flour tortillas in a dry pan and wrap in a cloth.
  2. Heat vegetable oil over high heat. Scramble the eggs, then set aside. Stir-fry the pork until it turns white.
  3. Add cabbage, carrot, shiitake mushrooms, garlic and ginger. Cook until the cabbage wilts.
  4. Return the eggs with hoisin sauce, sesame oil and spring onion. Toss. Spoon into the tortillas and serve.
