  1. Dry the green beans well. Heat a wide pan over high heat with a spoon of vegetable oil. Char the beans until wrinkled and blistered, then set aside.
  2. Add remaining oil. Stir-fry garlic, ginger, chili flakes and ground pork until the pork is cooked and a little crisp.
  3. Return the beans with soy sauce, dry sherry and sugar. Toss 1 minute.
  4. Finish with sesame oil and spring onion. Serve.
