Method

  1. Cook the jasmine rice. Dry-toast a spoon of extra rice until gold and grind (toasted rice powder). Mix it into the red curry paste with ginger, lemongrass and chili.
  2. Heat vegetable oil. Fry the paste 2 minutes, then the chicken thighs until coated.
  3. Pour in chicken stock, fish sauce and brown sugar. Simmer 12 minutes.
  4. Add green beans, baby corn, eggplant and kaffir lime leaves. Cook until the vegetables are tender. There is no coconut milk.
  5. Fold in basil. Serve with the rice.
