  1. Cook the jasmine rice. Heat vegetable oil. Fry red curry paste with garlic, ginger and lemongrass 2 minutes until it dries out.
  2. Add chicken stock and simmer 3 minutes. Stir in coconut milk, kaffir lime leaves, sugar and fish sauce.
  3. Add chicken thighs and pumpkin. Simmer 10 minutes.
  4. Add green beans and cook until the chicken is done and the sauce is thick.
  5. Fold in basil. Serve with the rice and a squeeze of lime.
