Method
- Preheat the oven to 200°C. Line a baking tray with baking paper.
- In a shallow dish, mix the breadcrumbs, sesame seeds, herbes de Provence, garlic powder, salt and freshly ground black pepper.
- Brush each perch fillet with olive oil and then coat it in the breadcrumb mixture, ensuring it is well covered on both sides.
- Arrange the fillets on the prepared tray. Drizzle a little olive oil over the top.
- Bake in the preheated oven for 15–20 minutes, or until the fish is cooked and the crust is golden and crisp.
- Serve immediately, with lemon to squeeze to taste.
