  1. Preheat the oven to 200°C. Line a baking tray with baking paper.
  2. In a shallow dish, mix the breadcrumbs, sesame seeds, herbes de Provence, garlic powder, salt and freshly ground black pepper.
  3. Brush each perch fillet with olive oil and then coat it in the breadcrumb mixture, ensuring it is well covered on both sides.
  4. Arrange the fillets on the prepared tray. Drizzle a little olive oil over the top.
  5. Bake in the preheated oven for 15–20 minutes, or until the fish is cooked and the crust is golden and crisp.
  6. Serve immediately, with lemon to squeeze to taste.
