  1. Start by soaking the cod, if necessary. If you are using cod that has already been soaked, proceed to step 2.
  2. Boil the potatoes in their skins in salted water for about 20-25 minutes, until tender.
  3. While the potatoes are cooking, preheat the oven to 180ºC.
  4. Drain the potatoes and lightly crush them with a fist or a fork, keeping the skins on. Arrange them in a roasting tray.
  5. Place the cod loins in the tray, among the potatoes.
  6. Peel the garlic cloves and slice them. Scatter the garlic and the olive oil over the cod and the potatoes.
  7. Put into the preheated oven for about 20-25 minutes, or until the cod and potatoes are golden and the cod flakes easily.
  8. Serve immediately, accompanied by a simple salad. Enjoy your meal!
