  1. Make a refogado with the chopped onion, garlic, tomato and pepper in the olive oil over low heat for about 10 minutes, until the tomato breaks down.
  2. Add the seafood mix (clams, mussels) and let it cook for 3 minutes, until the shells open.
  3. Add the carolino rice and stir it through for 2 minutes, until the grains turn translucent; then pour in 1.2 L of boiling water — three times the volume of the rice.
  4. Cook uncovered over medium heat; after 6 minutes, add the prawns and the piri-piri.
  5. Cook for another 6 to 8 minutes, until the rice is done but still loose in its broth, adjust the salt, finish with the chopped coriander and serve at once, good and malandrinho.
