Method

  1. Brown ground beef with onion and garlic. Stir in chili powder, cumin, salt, black pepper, cooked long-grain rice, canned tomatoes and sour cream.
  2. Stand the bell peppers in a baking dish and fill with the beef-rice mix. Spoon extra tomatoes over and cover with cheddar.
  3. Bake at 190C until the peppers are tender, about 30 minutes.
  4. Rest 5 minutes and scatter cilantro.
