  1. Brown the Mexican chorizo in olive oil. Add onion, carrot and celery until soft.
  2. Stir in garlic and tomatoes and cook until jammy.
  3. Add lentils, chicken broth, thyme, bay leaves, salt and black pepper. Simmer until the lentils are tender, about 40 minutes.
  4. Taste for salt and serve with lime.
