Method
- Toast the pasilla chile in a dry pan, then blend with canned tomatoes.
- Soften onion and garlic in vegetable oil. Scoop them into the blender and puree with the chile-tomato mix.
- Fry the puree until thick like tomato paste, about 6 minutes. Add chicken broth and simmer 15 minutes. Season with salt.
- Add cubed chicken breasts and cook about 5 minutes until just done. Ladle over avocado, cheddar and tortilla chips. Serve with lime.
