  1. Put the octopus in a pot with red wine vinegar, bay leaf and black pepper. Cover and simmer in its own juices about 40 minutes until a knife slides in.
  2. Drain. Cut into tentacles. Toss with olive oil, lemon, oregano and salt.
  3. Heat a grill pan until very hot. Grill 2 to 3 minutes per side until charred at the edges.
  4. Dress with more olive oil, lemon, oregano and capers. Serve with rustic bread.
