  1. Heat oil. Sizzle cumin seeds, then soften onion until deep golden. Add ginger, garlic and green chilli 1 minute.
  2. Stir in turmeric, chilli powder, garam masala and ground coriander. Add chopped tomatoes or canned tomatoes and cook until the oil separates.
  3. Add the chicken and yogurt. Fry until the chicken turns pale, then pour in hot water or stock.
  4. Cover and simmer 15 to 20 minutes until the chicken is cooked through. Taste for salt, scatter coriander and serve.
