Method
- Toss the chicken thighs with a spoon of soy sauce and a spoon of cornstarch.
- Mix the remaining soy sauce with oyster sauce, dry sherry, sesame oil, sugar, the remaining cornstarch and water.
- Heat vegetable oil over high heat. Stir-fry the chicken until it turns white, then set aside.
- Stir-fry garlic and ginger. Add the broccoli and a splash of water. Cover 2 minutes until the broccoli is bright.
- Return the chicken with the sauce. Toss until glossy and serve.
