  1. Season the pork chops with salt and black pepper. Heat olive oil in a wide skillet and sear the chops 3 minutes per side until golden. Set aside.
  2. Melt butter in the same pan. Cook the apple wedges and onion until they soften and take colour, about 8 minutes.
  3. Pour in the apple cider and dried thyme. Scrape the pan. Return the pork chops, cover, and simmer 12 to 15 minutes until the chops are cooked through.
  4. Taste the pan juices for salt and serve the chops with the apple and onion.
