Method

  1. Cook the jasmine rice. Cube eggplant and firm tofu.
  2. Mix chili paste, soy sauce, sugar and water.
  3. Heat vegetable oil. Fry the tofu until gold; set aside. Fry eggplant until soft.
  4. Add garlic and chili 20 seconds. Return the tofu, pour in the sauce, and toss.
  5. Fold in basil. Serve with the rice.
