  1. Soak the rice noodles in boiling water until flexible, then drain. Mix tamarind puree, brown sugar, fish sauce and oyster sauce.
  2. Heat vegetable oil in a wide pan. Cook garlic and onion 30 seconds, then the chicken until almost cooked.
  3. Push aside, scramble the eggs, and mix into the chicken.
  4. Add beansprouts, tofu and noodles, then the sauce. Toss until the noodles absorb it.
  5. Add garlic chives and half the peanuts. Serve with the remaining peanuts and lime wedges.
