Method

  1. Peel and cut the potato, carrot, onion and courgette into roughly 2 cm pieces.
  2. Put the vegetables in a pan, cover with 1.5 L of water and season with the salt. Simmer for 20 minutes over medium heat, until the potato gives way to a fork.
  3. Drain and rinse the already-cooked white beans, from a jar or tin, and add them to the pan for the last 5 minutes, just to heat through. If you bought dried white beans, soak them overnight and cook them separately for about 1 hour before using them here: they will not cook in the soup's 20 minutes.
  4. Blend to a purée with a stick blender and stir in the olive oil.
  5. Add the finely shredded cabbage and cook for a further 5 minutes, uncovered, before serving.

Use vegetables you have in the fridge. Keep half unblended for a more rustic version.
