  1. Cook the jasmine rice. Heat a little coconut milk until it bubbles, then fry the yellow curry paste until thick.
  2. Stir in the remaining coconut milk, fish sauce, brown sugar, tamarind puree and a splash of water.
  3. Add chicken thighs, potato and onion. Simmer gently 25 to 30 minutes until the chicken is tender and the potato is cooked.
  4. Taste for fish sauce and sugar.
  5. Serve with the rice.
