Method

  1. Slash the chicken thighs. Toss with lemon juice, paprika, yogurt, ginger, garlic, garam masala, cumin, chilli powder, turmeric, salt and vegetable oil.
  2. Heat the oven to 180C. Set the chicken on a rack over a tray. Bake 20 minutes.
  3. Baste with leftover marinade. Raise the heat to 220C and bake 15 minutes more until charred in spots and cooked through.
  4. Rest 5 minutes and serve with extra lemon.
