Method

  1. Mix ground chicken with garlic, ginger, coriander, salt, panko and the egg. Roll into balls.
  2. Brown the meatballs in vegetable oil, or bake at 200C for 12 minutes. Cook the jasmine rice.
  3. In the pan, fry onion then red curry paste. Stir in coconut milk and lime juice. Simmer.
  4. Return the meatballs and cook 10 to 15 minutes until cooked through.
  5. Scatter basil and spring onion. Serve with the rice.
