  1. Blanch the spinach 1 minute, cool, then blend with ginger, garlic and green chilli to a smooth puree.
  2. Heat ghee. Fry paneer cubes until golden; set aside. In the same pan sizzle cumin, then soften onion. Add garlic, tomato, turmeric and garam masala until pulpy.
  3. Stir in the spinach puree and salt. Simmer 4 minutes.
  4. Return the paneer, add cream, cook 2 minutes more and serve.
