Method

  1. Mix grated potatoes, grated paneer, cornflour, garam masala, chili powder, salt and coriander. Shape balls, brush with vegetable oil, and bake at 200C until gold, about 15 minutes, turning once.
  2. Soften onion, garlic, ginger, tomato and cashews in butter. Blend smooth.
  3. Return the puree to the pan with cream, sugar and water. Simmer 8 minutes.
  4. Add the baked kofta at the table so they stay intact.

Paneer medium-risk; halloumi or tofu. Batata, caju, natas and farinha de milho are easy. Bake, do not deep-fry.
