  1. Soften the chopped onion, garlic and tomato in the olive oil, with the bay leaf and cumin, for 5 minutes over low heat.
  2. Add the diced carrot and the 250 g of dried brown lentils, rinsed under cold water. These are dried lentils and need no soaking, unlike beans or chickpeas.
  3. Cover with 1.5 L of water, about three times the volume of the lentils, season with the salt and simmer for 20 to 25 minutes over low heat, until the lentils are soft but still whole.
  4. Blend half with a stick blender to thicken, if you prefer it creamier.
  5. Remove the bay leaf, adjust the salt and serve.
