Method
- Soften the chopped onion, garlic and tomato in the olive oil, with the bay leaf and cumin, for 5 minutes over low heat.
- Add the diced carrot and the 250 g of dried brown lentils, rinsed under cold water. These are dried lentils and need no soaking, unlike beans or chickpeas.
- Cover with 1.5 L of water, about three times the volume of the lentils, season with the salt and simmer for 20 to 25 minutes over low heat, until the lentils are soft but still whole.
- Blend half with a stick blender to thicken, if you prefer it creamier.
- Remove the bay leaf, adjust the salt and serve.
