  1. Toss the chicken thighs with soy sauce and cornstarch. Mix the remaining soy sauce with rice vinegar, chicken stock, sugar, sesame oil and more cornstarch.
  2. Heat vegetable oil over high heat. Stir-fry the chicken until golden, then set aside.
  3. Lower the heat. Fry the garlic and ginger 30 seconds without burning. Add spring onion.
  4. Return the chicken, pour in the sauce and toss until thick and glossy. Serve.
