  1. Heat oil. Sizzle mustard seeds and curry leaves if using. Soften onion, garlic, ginger and green chilli.
  2. Stir chilli powder and turmeric with a splash of water, then add to the pan 1 minute.
  3. Pour in coconut milk and canned tomatoes. Simmer 8 minutes.
  4. Nestle in the fish chunks. Simmer gently 6 to 8 minutes until just cooked. Taste for salt and finish with coriander.
