  1. Cook the Japanese short-grain rice. Fold in rice vinegar, sugar and salt while the rice is hot.
  2. Beat the eggs with a pinch of salt and cook a thin omelette. Slice into shreds.
  3. Cut the salmon fillets into cubes. Sear in vegetable oil with a little soy sauce until just cooked through.
  4. Slice the cucumber. Toast sesame seeds.
  5. Bowl the sushi rice. Top with egg shreds, seared salmon, cucumber, nori and sesame seeds.
