Method

  1. Toss the chicken thighs with soy sauce and cornstarch.
  2. Heat vegetable oil over medium-high heat. Fry the potato wedges until golden, then set aside. Brown the chicken and set aside.
  3. Fry curry powder and turmeric 20 seconds, then onion and garlic. Add coconut milk, chicken stock, sugar and salt.
  4. Return the potatoes, cover and simmer 15 minutes. Add the chicken 8 minutes more until the potatoes are tender. Serve with rice.
