Method
- Toss the chicken thighs with soy sauce and cornstarch.
- Heat vegetable oil over medium-high heat. Fry the potato wedges until golden, then set aside. Brown the chicken and set aside.
- Fry curry powder and turmeric 20 seconds, then onion and garlic. Add coconut milk, chicken stock, sugar and salt.
- Return the potatoes, cover and simmer 15 minutes. Add the chicken 8 minutes more until the potatoes are tender. Serve with rice.
