  1. Cook the jasmine rice. Heat vegetable oil. Brown the chicken thighs; set aside.
  2. Fry onion, red pepper, garlic and ginger. Add red curry paste 1 minute.
  3. Stir in peanut butter, chicken stock, coconut milk, fish sauce, brown sugar and lime juice. This bowl is thinner than panang curry; keep the extra stock.
  4. Return the chicken. Simmer until cooked. Fold in basil.
  5. Serve over rice with roasted peanuts and spring onion.
