Method

  1. Poach the chicken in water with onion, garlic and salt until just cooked, 25 to 35 minutes. Keep the broth.
  2. Blend tomato with a little cooked onion and garlic. In a pan, dilute mole paste with chicken broth until smooth. Stir in the tomato puree, cinnamon and salt.
  3. Simmer the sauce 10 minutes, adding broth if it gets too thick. Nestle in the chicken and cook 5 minutes more.
  4. Sprinkle sesame seeds and serve.
