  1. Cook the Japanese short-grain rice. Toast the panko breadcrumbs with a spoon of vegetable oil.
  2. Season the chicken breast with salt and black pepper. Coat in flour, beaten eggs, then panko.
  3. Bake at 200C on a rack until golden and cooked through, about 20 minutes.
  4. Slice. Serve with cabbage, tonkatsu sauce and the rice.
