  1. Cook the Japanese short-grain rice. Mix soy sauce, mirin, sake and sugar until the sugar dissolves.
  2. Season the chicken thighs with salt and black pepper.
  3. Heat vegetable oil in a wide pan over medium heat. Cook the chicken 5 minutes, press, then turn and cook until almost done.
  4. Pour in the teriyaki mix. Spoon the glaze over the chicken until glossy and thick.
  5. Slice and serve over the rice.
