  1. Cook the Japanese short-grain rice. Cut the chicken thighs into bite-size pieces.
  2. Mix soy sauce, sake, mirin and ginger. Marinate the chicken 20 minutes.
  3. Drain well and coat only in potato starch.
  4. Spray with vegetable oil and air-fry at 180C, or shallow-fry, until crisp and cooked through.
  5. Serve with lemon and the rice. Add salt only if needed.
