  1. Pat the firm tofu dry. Toss with cornstarch, salt and white pepper. Mix soy sauce, rice vinegar, sugar, water and more cornstarch for the sauce.
  2. Heat vegetable oil over medium-high heat. Pan-fry the tofu until golden, then set aside.
  3. Stir-fry garlic, ginger, dried chilies, Sichuan peppercorns and the white parts of the spring onion until fragrant.
  4. Return the tofu. Pour in the sauce and toss until glossy. Add roasted peanuts and remaining spring onion. Serve.
