Method

  1. Divide the mince into 4 portions of 150 g and shape 1 cm-thick patties slightly wider than the buns, pressing a shallow dip in the centre with your thumb (so they do not dome as they cook).
  2. Wash and dry the lettuce and slice the tomato.
  3. Split the buns, spread the cut sides with the butter and toast them in a large frying pan over medium heat for 1 minute. Set aside.
  4. Heat the pan (or griddle) over high heat with the oil. Season the patties with the salt and pepper only now and cook for 3 minutes without moving them, until crusted. Flip, lay the cheese on top, lower to medium, cover with a lid and cook 2 to 3 more minutes until the cheese melts.
  5. Spread both halves of the buns with mayonnaise, put lettuce and tomato on the base, the cheese-topped patty on top, close and serve at once.

Shopping tip

Beef mince with about 15–20% fat makes juicy patties; the sliced muçarela of Brazilian snack bars is swapped for flamengo cheese.
